Potato Gnocchi Recipe


1 cup mashed potatoes (use ricer)
2 egg yolks
1/2 cup shredded Parmesan cheese
1/2 cup All-purpose flour
1/2 teaspoon salt, 1/2 teaspoon black pepper
Mix potatoes, egg yolks, salt, pepper, flour ,and cheese,
On a floured surface, roll each portion into a long rope. Cut the ropes into one-inch pieces. Cook in boiling salt water. When they float to top cook 2 to 3 minutes longer.
Coat with olive oil and roasted garlic or tomato sauce.
