Pannukakku(Kropsua)- Finnish Oven Pancake

Pannukakku is traditionally a Thursday dish Serve hot or cold ...very good with berry sauces
4 eggs, 1 cup flour, 1/2 tsp salt, 2 tbs sugar, 1 tsp vanilla, 2 cups milk, 3 tbs melted butter

This is my mother's in-law recipe
Beat the eggs and sugar well, until thick and foamy. Add the milk, salt, vanilla.
Stir in flour and mix well about 10 minutes. Add melted butter.

Preheat the oven to 325 degrees and bake for 1 hour or until the top is brown

Serve as breakfast or dessert
with with bilberry sauce, or blueberry/strawberry preserves.

Cold, cold day - Perfect day to bake some Pulla!







Pulla by C.
is the traditional sweet bread of Finland. It is served with coffee at breakfast or as an afternoon snack. Every Finnish household take pride in making pulla and sharing their recipe with friends and relatives. This is my mother's in law recipe that has been passed down for generations.
