Pannukakku(Kropsua)- Finnish Oven Pancake

Pannukakku is traditionally a Thursday dish Serve hot or cold ...very good with berry sauces
4 eggs, 1 cup flour, 1/2 tsp salt, 2 tbs sugar, 1 tsp vanilla, 2 cups milk, 3 tbs melted butter

This is my mother's in-law recipe
Beat the eggs and sugar well, until thick and foamy. Add the milk, salt, vanilla.
Stir in flour and mix well about 10 minutes. Add melted butter.

Preheat the oven to 325 degrees and bake for 1 hour or until the top is brown

Serve as breakfast or dessert
with with bilberry sauce, or blueberry/strawberry preserves.

Bilberries

Many ways to eat bilberries...I love to pick berries with my sisters! Ice cream w/ Bilberry sauce & fresh berries (my every night dessert in Michigan)
Oatmeal w/Bil and Blueberries


Bilberry has been used for centuries, both medicinally and as a food in jams and pies. It is related to the blueberry and is native to Northern Europe. Bilberry fruit contains chemicals known as anthocyanosides, plant pigments that have excellent antioxidant properties. They scavenge damaging particles in the body known as free radicals, helping to prevent or reverse damage to cells. Antioxidants have been shown to help prevent a number of long-term illnesses such as heart disease, cancer, and an eye disorder called macular degeneration. Bilberry also contains vitamin C, which is another antioxidant. (University of Maryland Medical Center)
Often associated with improvement of night vision, bilberries are mentioned in a popular story of World War II RAF pilots consuming bilberry jam to sharpen vision for night missions (Wikipedia)
