Veggie Omelet, English Muffin, and ham for breakfast
Cheerios for lunch
1 egg, beaten
1 cup flour
1 large zucchini, finely chopped
½ cup chopped onion
1 tsp chopped garlic
½ cup 2% milk
½ cup shredded mozzarella cheese
Salt and pepper to taste
Mix together the ingredients.
Add 1 tablespoon canola oil in a skillet over medium heat. Drop batter in the skillet, and flatten lightly. Cook for about 5 minutes, turn over, cook on the other side until golden brown.
